Join Astronaut Noodle as he attempts to photograph the pesky, super-fast citizens of Planet Velocity. This is author Kenlyn Foster Spence's debut, and the second children's book by illustrator Cindy Chadwick, who created the lovely artwork for the first BelleBooks' children's title, KaseyBelle, the Tiniest Fairy in the Kingdom.
1 cup butter, softened
1 cup packed brown sugar
1 cup granulated sugar
2 eggs
1 teaspoon vanilla
2 cups flour
1 teaspoon baking soda
1 teaspoon cinnamon
2 cups semi-sweet chocolate chips
1 cup butterscotch chips
1 1/2 cups rolled oats
1 cup chopped pecans
With electric mixer, cream butter and sugars. Mix in eggs and vanilla. In separate bowl, sift flour, soda and cinnamon. Add to butter mixture 1/2 cup at a time, mixing well after each addition. Using a wooden spoon or spatula, stir in chocolate chips, butterscotch chips, oats and pecans. Drop by heaping teaspoonfuls onto lightly greased baking sheets. Bake at 350 degrees for 10-11 minutes, or until edges begin to turn brown. Cool on cookie sheets for 2 minutes. Using a spatula, transfer to cooling racks. Cool completely. Makes about 3 dozen large cookies.
